The first moment, people think of a fish, I think most people would have an image of a fish that is facing left. When people draw a fish, they use the right side of their brain.
When you use the right side of your brain, you use visual image information and think all at once. For example, when you recognize a face, you are using the right side. Drawing is the same as this, which is also using the right side. On the other hand, the left side uses a step- by – step process of thinking which is used when solving number, word, or other symbol problems. People could draw from reality or from a certain image you have in your head. I think nationality, their age, or if left or right handed would affect which way a fish is being drawn.
Nationality
I think nationality would affect the results because people would think of a certain image of a fish from their culture and traditions while they are drawing. In Japan, fish is always served facing left. Even in supermarkets, it is always sold facing left (Picture 3).

←Picture 3:
Fish is sold wrapped in plastic wraps in supermarkets. However, not all countries serve or eat fish facing a certain way. Picture dictionaries or books from their country also influence people to draw the way they see things from their long and short term memory. According to Japanese, Taiwanese, Canadian, and New Zealander picture dictionaries, fish are drawn facing left.

To this, children to adults who read these books and see these images, they would likely draw fish facing left.
Left or Right Handed
70- 90% people worldwide are right handed. The other 10% is left handed. 30% are mixed handed. Ambidextrous (equally capable of each hand) people are very rare. The Arabic script, Hebrew alphabet, Syriac alphabet, Thaana, N'Ko script, Samaritan alphabet, Mandaic alphabet, Imperial Aramaic alphabet, Phoenician alphabet, Lydian alphabet, Cypriot syllabary, Kharosthi, Old South Arabian, Avestan alphabet, Pahlavi scripts, Old Turkic alphabet, Etruscan language and Umbrian language are languages written from left to right. Therefore, people who write these letters are likely to start drawing from the right (depending on if they start drawing from the head or tail. People who write other common languages such as English, French, German, Hindi, and much more will likely start writing from the left.
For all of these reasons, I think most people would draw dish facing left.
